Just woken up and looking for an alternative breakfast? Whether it’s the weekend or any day of the week, treat yourself to a protein breakfast to get you through the day with more zest. To avoid too much sugar in my first meal of the day, I look for foods that give me a boost of energy without going overboard with sweets, especially since Ryan’s been around. Incorporating the right amount of fat and protein creates a balanced dish of nutrients and provides the right metabolic stimulus for our hormones. So, let’s get sprinting!

Ingredients for two people
For the pancakes
- 3 eggs
- 75 g almond flour
- 70 g of almond milk
- 1 date or 1 tablespoon of honey
- Half a teaspoon of baking powder
- Flavourings to taste (vanilla, cinnamon, lemon peel…)
For the apples
- 2 Golden Delicious apples
- 2 tablespoons honey
- 1 tablespoon of coconut oil or a knob of butter
- Cinnamon
- Rum (optional)
Put the eggs, almond milk, dates, and almond flour together with the baking powder in a blender and blend for a few seconds until the mixture whips together slightly.
Cook the pancakes on a griddle lightly greased with a little butter or coconut oil for a couple of minutes on each side.
In the meantime, peel the apples and cut them into cubes, heat a frying pan, put a knob of butter and add the apples, honey and cinnamon, caramelise and add a small glass of rum, let the alcohol evaporate, and serve the apples on the pancakes adding a knob of butter and some pecans.
